Thai food

ทักทายจากประเทศไทย
Greetings from thailand.
Ever since we came back from chiangmai, we have been thinking about and craving for thai food. One day we decided to try the thai food place at hougang where everyone is talking about. It is indeed impressive. The chef is thai, the waiting staff are thai. The food is authentically thai and not made for tourist. I think the standard is there and we'll definitely eat there whenever we miss thai food. Price is reasonable but there is always a long but moveable queue during dinner time.

My pineapple tarts

On behalf of the Assisi Hospice, I wish to thank all my faithful supporter in the annual sale of my pineapple tarts. This year, we've successfully collected S$210 for the funds. I apologise again to those orders I could not take on.
Last year, we benefited the Children Cancer Foundation and we feel very happy to be able to continue in this cause this year. We almost discard the cause this year due to our very busy schedule and CNY being in January. After I apologise for not baking, I actually felt really uneasy. So I decided to extend this charity movement to some close friends with a targeted cap of S$200. I felt much happier after that. We are constantly looking for other avenues to show our gratitude to the grace we've received abundantly from God. We thank God for all we have been blessed with and would like to share a little something around.

Once again, thank you for your kind support.

Crab from the kitchen

Dave and I left the girls with my mum and went out together. Well, almost like dating but without the electricity! Hahaha! We were wearing rubber shoes! Anyway, he suggested we have a crab meal that night and I was like "yes! yes! yes!" so we picked out three huge crabs from the supermarket and rushed home to cook. Dave did the cooking and the washing and I did the eating and the praising. It was a great crab meal and I'm so fortunate to have a man who can cook crab for me.

Joelle's lunchbox 4

Miss these? I do, not Joelle though. She's happy to be among the queue in the canteen eating the same food as the rest of her friends. She's happy to be part of the group of friends with pocket money to spend and the freedom to choose (out of the same five to six stalls) her meals.

Though I miss these lunchboxes, I'm happy I do not have to wake up any earlier than now to prepare them. I'm happy to throw some biscuits into airtight lunchbox or spread a couple of bread
for her recess and drop some coins for her to buy her own lunch. I think I can live with this arrangement.

I wonder if isabelle would prefer mummy's lunchboxes...

Mummy's dinner 2

Mummy has not been cooking regularly during the june holidays. Reason being we are out alot and so had many meals with friends and after a while the fridge gets a little empty and the chef gets a little lazy. So for all those interested, these are about the nicer home cooked dinner from the lot of other simplier and mostly not interesting meals. Well, I do not mind stressing that I'm not a fantastic cook after all.

Teriyaki grilled chicken with quail eggs, fresh tomatoes and japanese rice.

Yam rice with chicken meat, mushroom, hard boiled egg and boiled vegetables.

Brown/fragrance rice mixed with boiled tofu, carrots and vegetables. Topped off with fried shrimps and japanese condiment.

Cha Soba

Recently joelle likes this cold noodles and have been requesting for it very meal. She likes it very cold with lots of seaweeds. I do give her other dish to accompany her cold noodles like grilled teriyaki chicken or baked salmon. It's very much a simple dish to make actually and can be quite nice.

My noodles

When I was still single, I remember making noodles like that all the time. It's so simple and really nice. Just oyster sauce, sesame oil and ketchup as seasoning for the noodles, a sunny-side-up, hot dog and some boiled vegetables. Fantastic lunch. I recreated that for my girls one afternoon and hmmm... they did not enjoy it as much as I did. But the important thing is they finished it up.

Mummy's Lunch

To be honest, I'm not a fantastic cook. I dread thinking about the menu for every meal. It's like lunch and dinner everyday now during the holidays. I still keep it really simple for lunch which is usually noodles or porridge. I just discover that the girls like udon and cha soba. Yeah! I head to NTUC and lug back packets of udon and soba and the sauces. I usually have packets of seaweeds in the kitchen so I just sprinkle some over their noodles and they like it very much. Sometimes isabelle will request for porridge. Yes, she's my little oriental girl. So I will grill some slices of fish heavily marinated with italian herbs (their current favourite too) and another dish of vegetables (with luncheon meat in the picture below).

It's only the first week of june. I have another three week's worth of menu to come up with. Oh man...

Mummy's dinner

Some people (especially my mum) might wonder what I feed my girls for dinner now that mary has left. To be honest, it's become even simpler than simple and usually a one-pot dish. As long as there are three groups (meat, vegetables and dairy) in one dish, I believe it's healthy enough for them. Joelle, being a very tactful person, always gives me the thumbs-up to most of the meals I prepared. Isabelle, on the other hand would declare in all honesty that her grandma or mary cooks better than me. I would not blame her for that because the spread used to be three dishes and a soup for dinner. Whereas now she's only getting either an all-in-one soup or an all-in-one dish. BUT I would like to stress that my cooking isn't all that bad. I'm just not that great with chinese cooking. Japanese or western dishes... no problem.

All-in-one dish with fish balls, eggs and vegetables topped with ikan billis and wolfberries.

Grilled toman slices (marinated with italian herbs) with vegetables and tofu and udon topped with furikake and seaweed.

All-in-one rice dish with chicken pieces, chinese sausages and mushroom topped with furkake sake.

Joelle's lunchbox 3

Without mary, the kind of food joelle brings to school has become simpler. Hardly any rice set now. Mostly sandwiches and finger food. She's not complaining as she's beginning to enjoy buying food from the canteen with her friends. So I allow her to buy food from the canteen for lunch on her long days (which is almost everyday) and I will still pack food for her recess at 10am. So far it's working alright and we're both happy with that arrangement. Here's some pictures to give you an idea.

Apple strudel (bought)

Banana cake (made)

Egg mayo sandwich (made)

Honey baked ham and cheese sandwich (made)

Potato smileys (bought and baked)

Joelle's lunchbox 2

Starting from March, joelle will have "the little art bug" class in school every wednesday. That would mean another long day in school. She totally enjoys her ballet on mondays and PAL on thursday. I'm very sure she would enjoy her art lesson too. She is such an art person.

That means a little change in her weekly menu from March. Here's some pictorial examples.

Monday's rice set with chicken and apples.

Tuesday's sandwich set with apples.

Wednesday's tuna rice set with fruit salad.

Thursday's rice set with fish and apples.

Friday's finger food set.

*These pictures are taken when mary's still helping with the meal preparation.

DIY maki

It's simple and the girls like it! You can use anything actually. The girls chose carrot and cucumber sticks as vegie, hotdog and crabsticks as meat and egg strips too. We ever marinate chicken meat in teriyaki sauce and beef slices in bbq sauce. Japanese pickles, another favourite. Today, it's VERY simple but the girls still enjoyed themselves.

Char siew finally!

We tried making char siew for a while now. We also tried using many types of meat for it. Eventually I think this is the best choice of meat and the best look and taste. Next time we would slice it up a little thinner.

We usually make green curry as all of us like it so this is the first time we try yellow curry. Not bad too. We like it and joelle also tried some (accompanied by water). Should we try red curry next time?

Another simple meal. Blanched the vegetables and fly the meat mixture. It's the usual carrots, tofu and minced meat.

Mummy's lunch #25

Daiso opened a branch at rivervale mall and got some japanese rice molds and some other stuff on their opening day. Met my husband and his team who were filming there too. The brown piece of meat behind is actually beef patty which would look and taste much nicer with some herbs or condiments as seasoning. Anyway it'll get better.
